IF you already have a 1080T(I do), the 2080Ti is the only one to consider. The 1080Ti can overclock to 2080 Super performance anyway.
Not worth it, IMO.
Getting the flagship card of one generation allows you to skip the next - sometimes even 2!

If you don't have the 1080Ti, grab the 2080 Super.

What do you have now?
What are you trying to accomplish?

sli, may win you synthetic fps benchmarks, but a single good card will give you a better gaming experience.
sli is prone to screen tearing and stuttering.
An increasing number of games no longer support dual gpu.

As to the to cards in question, RTX2080 super is not a big jump in capability over a GTX1080ti.
