What's minimum ps for x370

Have a 700 watt ps but don't have enough power connectors for the top.8 pin. Do I need a bigger ps?

700w should be fine, but really depends on other components too, if you don't have an 8 pin eps power cable, you can use a 4 pin one instead or get a converter cable.

I've seen plenty of people running Ryzen systems on 500w PSUs

you need to purchase a good reputable branded psu ... And no you dont need a bigger psu... You will be fine with 650 watts psu... some examples are:

Corsair RM650x
Seasonic DDR 650TD
