I am looking to add a NVME storage to my new Z390 motherboard:
https://www.newegg.com/Product/Product.aspx?Item=N82E16813144214&nm_mc=AFC-C8Junction&cm_mmc=AFC-C8Junction-_-na-_-na-_-na&cm_sp=&AID=11552995&PID=6361382&SID=tomshardware-7216103770196940376

I am debating about whether I should get the Samsung 970 Evo or 970 Pro:

970 Evo only $230
https://www.samsung.com/us/computing/memory-storage/solid-state-drives/ssd-970-evo-nvme-m-2-1tb-mz-v7e1t0bw/
970 Pro cost almost double at $380
https://www.samsung.com/us/computing/memory-storage/solid-state-drives/ssd-970-pro-nvme-m2-1tb-mz-v7p1t0bw/

What is the difference between the 2 that makes the Pro cost almost double? I can only see that the Pro has a 100MB/s faster Read speed and 200MB/s faster write speed.

As you note, slightly faster speed.
But also, faster sustained speed.
MLC vs TLC NAND.
Also, the Pro has a longer warranty.

When copy large amounts of data, the EVO speed will drop down. The Pro should sustain better throughout.

However...they are both blindingly fast.
Unless that bit of difference is actually costing you $$ (real money at work), don't bother.

The Pro versions have better endurance, they are backed by a double amount of terrabytes written warranty, for example 600 TBW on the 512gb Pro, against a 300 TBW on the 'regular' EVO 970 (both have 5 year warranty).
If you're not a professional heavy user that can justify this difference the 'regular' 970 EVO should be the right choice, but if you somehow manage to write over 160gb everyday day (which is what you need to reach 300TBW in 5 years), you might consider the pro version.
