Have x99, i7 5820k, ftw3 1080ti, 16gb, no need i know but if i up grade the cpu and mobo rest is new and have 32gb kit, when should i , something in the way of 2700k or look prob.? Ideas or thoughts

No reason to upgrade what you have at this time. I'd wait for the next gen 10nm CPUs from Intel/AMD.
