If it's necessary you'll have to decide for yourself. If you like to play every game on maximum settings at 60fps straight, then you will be upgrading more often then someone who is fine with lowering the settings and less fps.

I think your SLI 670s still do totally fine 1080p with new games. They should be almost as fast as a 970 and that will max out anything at 1080p.

Id wait atleast for the next generation in your case. :)
Why would you change to a single card? You mean upgrading to a new single card that might be more powerfull than your two cards in SLI?
Well, do it if you feel like you need more performance or get laggs and refuse to lower the settings.
 
You said it better then I asked. I'm not sure when to upgrade. They keep coming out with new cards and I don't want to fall too behind, yet I don't want to upgrade until it would be necessary and worth the money.
