I'm going to build a new gaming pc and have already chosen all components except the motherboard and PSU, i don't know what to buy there are so many.

For the PSU I want a decent one and have been looking at Corsair RMx series but how much wattage i need is a ? I will be OC cpu and gpu so I want headroom for that. I also want to have enough power to power a Ryzen 7 in the future. For motherboard I have no clue, budget around 170€. My dealer sells all of these motherboards (b350, x370, b450, x470) in that budget but don't know which one. I want best for the money and also OC good potential. Example, they sell a MSI X370 gaming pro carbon and for same price you would get a MSI X470 gaming plus board, which one is better for my build?

So here are the parts I know:
CPU: AMD Ryzen 2600X
GPU: GTX 1070 ti
RAM: Kingston 16GB ddr4 2400 mhz
SSD and HDD
Case: ATX

Solution
It won't break anything, but the RM750 is overkill for what you want. 550-650 would work just fine. Even overclocked. You have a 95W CPU and a 200W GPU. If you get a deal on a 750W that's fine, but it's not needed.
