I just purchased a Ryzen 5 3600x. Currently looking at motherboards, want one that works right out of the box without flashing bios. Have it narrowed down to two. Either ASUS Prime X570-P or MSI B450 Tomahawk Max.

The increased PCIe bandwidth is not a gamble. The NVMe drives are not a gamble.
I can see both arguments. I went with X570 simple for the "what if" and budget wasn't an obstacle.
However the PCIe bandwidth has yet to have any benefit, as our current technology barely utilises the full bandwidth we have now outside of perhaps the top GPUs of the market for example.

Same with NVMe - currently, no signifcant difference between NVMe and any SATA interface SSD other than in artificial benchmarks, and this isn't likely to change soon. But I can see both sides of the argument.

I recently went through this same process, I was looking for a new MB for my 3700x and was going back and forth between the Asus ROG Strix X470-F Gaming and Asus ROG Strix X470-F Gaming.
I ended up going with the X470-F because I got it on sale for $159 vs $239 for the X570.
For me the X570 just wasn't worth the extra $80.
