I have no intention of going above 1920 x 1080, where should I be looking (preferably in the nvidia range) for best graphics? I'm assuming that the GTX1080 would be overkill, and underused?

Its hyperbole that fanboys tout as yet another reason to like Nvidia over AMD. The truth is both offer driver updates often right before or on the release date of new games. In some cases (like Doom) the driver update AMD offers gives it an advantage while Nvidia is still working to...

RX 480 and GTX 1060 are the best "1080p" cards out there, there really is no reason to go any more expensive at that resolution unless you want to go for crazy fps (ie if you have a 144hz monitor) then I would say get a 1070 if thats the case.

They are both pretty equal with each having an advantage in some games vs the other. The 1060 is a bit friendlier to DX11 games though while the RX 480 favors DX 12.

For that resolution, the GTX 1060 would be very adequate now. The RX 480 is in the same strata, but if you're purchasing a monitor with this then keep in mind that FreeSync monitors are much more affordable than Gsync equipped monitors:

Adaptive sync monitors are absolutely wonderful for gamers, and give the best stutter/lag-free experiences.....especially as your GPU ages and games become more demanding.

Thanks guys. The RX480 does look pretty good- I had originally been discounting AMD but the price is rather good compared to the Nvidia cards. What's this I read about poorer driver support from AMD than NVidia? I don't think it would affect me too much- I'm not someone who jumps onto new titles as they are released so the drivers would be more mature by the time I would buy most games, also price is important to me because income is low.
