It's hard for me to choose because they are both good.

Computer #1:
Dell Inspiron 3880
Processor: 10th gen Intel Core i5
RAM: 12GB
Storage: 512GB
No Optical Disk Drive

Computer #2:
Dell Inspiron 3880
Processor: 10th gen Intel Core i3
RAM: 8GB
Storage: 1TB
Optical Disk Drive

It will be used mostly for work and sometimes Minecraft.

Location and price bracket? Maybe an AMD APU might serve you better than an intel machine. Also look for one with an SSD because the experience will be a lot better

so what kind of work? web browsing and word docs? or large spreadsheets and video editing?? or what. it makes a difference as to how much power you need, ram and so on.

minecraft is not too heavy so the built in gpu will be good enough for that, but your work is going to decide what you need.

the i would be ample for basic office apps and minecraft.

the other one will give you room to grow if you wish to do other stuff in the future.

If those are in the 400-500$ and dont come with a GPU. I would check the link out below and see if you like it. You didn't link prices so i'm not sure where you are at budget wise.

I’d buy the one with the Core i5.

Same pc, different add-ons. You can always upgrade storage capacity easily, so that's really not a consideration. The only consideration is the Optical Drive. If you have a need/use for an optical, get pc #2, add on storage as needed, it's cheap enough. If you don't have any use for an optical get pc #1.
