Hi! I'm about to upgrade CPU, Mobo and RAM of my pc (From FX-6100 and ASRock Extreme 970), so I'm looking for advice, which combo I should get?

Combo #1: i5 7600k & Gigabyte Z270-A & 16GB DDR4
Combo #2: Ryzen 1500X & Asus PRIME X370-PRO & 16GB DDR4
Combo #3: Ryzen 1600 & Asus PRIME X370-PRO & 16GB DDR4.

The current PSU is XFX Pro 550w Core Edition 80+ Bronze, so is it enough for any of those combos?
Also, I'm gaming at 1080p and aiming for 60fps, The next upgrade will be GPU and monitor to 1440p or 4k, so the cpu should be future-proof.

Solution
Because you don't have to have the high end boards to overclock, you could also look at the Asus B350 mb, unless that doesn't matter to you.

I would look at the Ryzen 1600 since game performance is close to the I5 but if you get into content creation at all, the Ryzen takes the cake, easily.

Go for 3, it's the best ryzen 5 cpu price to performance relationship, and the motherboard is perfect for you.

The psu is very good.

If you are going to play in 4k upgrade to 1070 or 1080 your GPU.
