Ryzen 3600, hands down.
9600k already looks bad(in value) from the start at just 6 cores/6 threads.
3600x: You're paying extra for a freaking LETTER. It doesn't perform or overclock any better than 3600 non-x.

3600 $195 65W 6 core 12 threads 3.6 to 4.2 ghz Comes with a cooler

3600X $244 95W 6 core 12 threads 3.8 to 4.4 ghz Comes with a cooler

9600K $225 95W 6 core 6 Threads 3.7 to 4.7 ghz No cooler!

Rendering and content creation both Ryzens fair better by a large margin in some cases.

1080p gaming is a mixed bag and depends on what the API partnered with. Some titles have a 9600K above a 3700X while others it fairs below a 3600 by a slight margin.

1440p gaming and above your offloading more work to the GPU and the margin narrows depending on how powerful the GPU is. Because of the lack in a cooler the AMD chips just flat out offer a better value, the coolers may not be good for someone looking to max overclock but for the standard user that allows the system to set its own clocks, they do pretty well for an OEM.
