I'm looking to upgrade my Ryzen 7 1700x to either a Ryzen 7 3700x or a Ryzen 5600x. I wonder which one is best.

I'll use it to play games like cyberpunk, football manager and other single player games. Also I'll use it for video editing and rendering.

Solution
You want a good CPU for gaming. 5600X.

You want a good CPU for rendering and editing. 3700X.

The 5800X fits both.

Buy the 5800X. It will last for a while.

My motherboard is a Asus TUF B450-plus gaming
You will need to update the motherboard BIOS first.
For the processor that is your choice for mostly gaming I would go with the 5600X it's has about 16% faster single core speed. If your more into the editing, rendering and the program can use all the cores the 3700X will have the advantage by about 16% in that.

Yep, and either one will be a huge jump in performance from where you are now, as well as be more power efficient:

Ah yes then I might go with the Ryzen 5 5600X, though if there are others that are better in the same price range, then I would love to know.

Also should I upgrade this before I upgrade my GPU? I'm waiting to get my hands on a RTX 3070 to replace my GTX 1660ti , so not sure which to upgrade first.

The 5800X does look awesome, though is it worth the extra that it costs compared to the 5600X?

Yes it is. For editing and rendering.

It's the same thing with the 3600X, 3700X, 3800X, 3900X, 3950X.

The 3700X is the best gaming CPU of the bunch. The 3800X, 3900X, 3950X doesn't really perform better in games but they do in workstation stuff.

So since you play games and you are gonna do workstation stuff you really should go for the 5800X. If you said you were gonna do little gaming but a lot of workstation stuff I would have suggested the 5900X. I think the 5800X fits your need perfectly. If you can afford it go for it :)

Thanks for the great advice, I think I'll go for that one, when I can get my hands on one. Seems to be in high demand.

Only bad thing I can see on it is, that it uses more power than the other CPU's, so I'm wondering if I should switch my PSU as well then. It's a Seasonic Focus+ 750W 85+ GOLD PSU

140w max with pbo and all cores at 100%?

No you don't need a different psu, a focus+ 750w can manage it easily even if you dropped something silly like a rtx 3090 in there.

Started to look over prices and the videos in here some more. Currently here in Denmark, it's 1200 DKK (196 dollars) more for the 5800X than the 5600X, and according to the video it's not that much more powerful to justify the price, and they'll be dropping as soon as they get in stock. So I'm wondering if I should wait even more, or go with something else.

Compared to what you have the 5600X would be a great upgrade. The 3700X would still be a great upgrade too but you're losing that 19% single core performance increase from the Ryzen 5000. So if you don't mind having less FPS in games but you mind having the power for that workstation stuff go for the 3700X.

5800X, 5600X or the 3700X they are all good CPU and a major difference to your 1700X.

MSRP difference between the 5800X and the 5600X is 150 dollars. If you can wait and get it cheaper a bit later that wouldn't be a bad idea but if you do have the money just buy it. It's not like you will be disappointed in that 5800X. It will last you for years and years and you won't regret your decision.

I'd say 3700X or 5800X. Difference between both? that 19% single core performance increase.
