Which is better Gtx 980 vs Leadtek Quadro NVS 810 4GB for 3d rendering

Also which it be worth getting 64gb of ram and a i7 3940k or 32gb ram and a 5930k.

This all totally depends on what you are rendering and what software you use. The Quadro NVS is designed for powering 8 displays, it won't work well for rendering. If you software supports the 980, it will be better. Of course, if your software supports the 980, I would recommend dropping down to a 970 or bumping up the the 980 ti.
If you need 64GB for your render job, it will be better.
The 3930k and 5930k actually have similar performance, but you will miss out on a lot of features using the x79 platform instead of x99 and you will probably have to spend more for less since the x79 platform is so old now.

I've worked in in 3d graphics for 15 years and used to solely get quadro cards but have recently stepped to getting Geforce cards on my personal machine.

The offices I have freelanced in have almost always used Geforce cards.

The main things that quadro cards are better at is accurate, real-time displays in your 3D software, supported performance drivers and shader programming for game engines. It also used to be that Cuda was only supported by quadro whereas now it's supported by Geforce as well.

Quadros give better stability. Think of it kind of the like xeon version of a gpu.

It depends on what you're trying to do but to be honest if I were you I'd say go for the gtx. There are very few times and very few industries in which the user will gain any real benefit from the Quadros despite them being far more expensive.

Also remember, your 3d software's rendering is primarily done on the cpu.
