Which is my best processor/motherboard combo?

Hi everyone. I have 2 partial systems, and was wondering what the best route was to go with it to get the best performance.

#1 * Intel Core i7-920 Bloomfield 2.66GHz LGA 1366 130W Quad-Core Processor BX80601920 + EVGA E758-TR 3-Way SLI (x16/x16/x8) LGA 1366 Intel X58 ATX Intel Motherboard

OR

#2 Intel(R) Core(TM)2 Duo CPU E7500 @ 2.93GHz, 2933 Mhz, 2 Core(s), 2 Logical Processor(s) + Gigabyte EG41MF-US2H motherboard

The video card I have is a:
SAPPHIRE 100259-1GL Radeon HD 4870 1GB 256-bit GDDR5 PCI Express 2.0 x16 HDCP Ready CrossFireX Support Video Card

The video card and 8GB of RAM will go in whatever base system I choose.

Can you guys help me?

Thanks for the quick reply, not too sure about overclocking, though. I've never done that and worried it could get too hot/damage it? Is the first one still better with no overclocking?
