So if you were in this situation what would you do?there will be maybe 2-5% difference between the bog standard 2070 and the super duper OC version, is that worth the extra cash to you. Consider waiting for the super version.

I tend to find that picking a GPU often comes down to budget, cooling and aesthetics. Most reputable cards (Gigabyte, MSI, ASUS etc.). all have good cooling solutions usually. If you get the one that fits your budget and you like aesthetically, you won't really go wrong IMO.
If you're going to spend a lot more money to get a specialised OC version of a card, you may as well spend more and get the next card up.
