There is no "best" version. The standard window 8.1 is fine to use.
Only certain people need the extra features of 8.1 Pro. For gaming, you don't need 8.1 Pro.

I personally use Windows 8.1 Pro, because I don't just game on my PC, and I like some of the features of 8.1 Pro. If you're just gaming, then I think you'll be just fine with regular Windows 8.1.
The regular Windows 8.1 is enough for a gaming PC, but Windows 8.1 Pro has some awesome features but still, not the features that you'll need at gaming.
Pro allows data encryption and also allows you to use Hyper-V to create virtual machines. I prefer using Vmware Player Hyper-V where I have Windows 10 technical Preview as a VM.
