The i7 is the better choice as video editing software generally run better with quad core cpu's as they are more optimised. This will depend on the software but this is general. As for gaming, any will do depending on the settings you are going for. The i5 is good for most games at med to high settings but the i7 is better for anything higher.

The ssd has less storage space so keep this in mind when you are loading games but it gives you faster boot times for your programs and os.

The choice is yours.
i7 one i think it is much better if you can afford to buy it,more cores means better multitasking you have a 4 core vs 8 core also ssd is something that you should consider even for the i 5 one, if you are going to do video editing and your budget allows you go for the i7,that doesnt mean that you wont be able to do these tasks with the i5 one,i would choose the i7 for the video editing you mentioned if i had the budget, also another option that would cost much lower would be making a desktop.

I added another laptop.Whould you take a look at it? :3

The third one is slightly better in that the cpu and gpu have a slight performance increase. The main difference between the second and the third is the storage. If you need lots of space the third is the best. If 512gb is big enough, then stick with the second one.
