Which LGA 2011-v3 Motherboard should I go for?

For number 1, the extra cores would make a difference. For the other 2... meh... You'd have to look at benchmarks to see how much of a difference though...

that would highly depend upon your work load. The thing that would make the biggest difference is the CPU...

For highly multi-threaded workloads, the 6800k would shine. Otherwise, the 6700k would be a better bet. The 6700 also benefits from being an newer cpu core than the 6800k (around a 10% improvement depending upon benchmark).
