would you advise me to stay away from micro since not all gpu will fit?
That's not how that works.
If there's a PCIe slot, any gpu will fit.
The prime difference between ATX and M-ATX is the connectivity; the smaller form factor boards tend to have fewer ports for storage as well as PCI/PCIe slots and USB. But if all you're looking to do is plug in a cpu, gpu, a few storage drives, keyboard, mouse, and some speakers, AKA the bare essentials, then the micros are fine.

B450 chipset motherboard should do it. But you need to upgrade the BIOS for the Ryzen 300 series. If you want to be more future proof, then anything above A520 chipset motherboard should be compatible for Ryzen 400 series (Zen 3).

While for the memories I suggest you choose minimum is 2666 Mhz memories. Above that speed is much greater.

Yeah, Ryzen 300 series means 3100/3200/3300/3600 and etc. Sorry if it's confusing.

And yes, A520 or everything above B450 chipset can run AMD Ryzen 3000 series (Zen 2)

To make it easier maybe you want to see this Chipset tables for the motherboards
