Which one is better for gaming?

Which one of these suits best for gaming performance (FPS and Graphics) ?

It depends on what games you wanna play. AMD isnt for ArmA and DayZ. Any other games would work for AMD but I must warn you that AMD, for some, has not been a great expierence. I choose NVIDIA over AMD. You couldnt go wrong with either. I think NVIDIA is better for any game.

GPU matters more in games. The 8870m is definitely a faster GPU. According to notebookcheck, the 8870m is a class 1 gpu and the 740m is a lower 2nd class.

The i7-4500u + 8870m configuration is a Dell 5737-17R's and the other one is a Lenovo. I also found an Asus that has a quad i7 and 740M. Which one of these, then?

The 8870m is going to be the best for games, as it is the better GPU. I do not care for GPU boss, but it is the only site that directly compares the two.

I know most of the comparisons between the middle-class - high-end CPU's or GPU's but I've also learned that the CPU afects the FPS when playing games.

GPU > CPU for games unless said CPU is bottlenecking a GPU. Given that the 8870m is only about as fast as a desktop HD 7770, you have nothing to worry about on that front.

I understand now. So the CPU affects the GPU only if it's too slow. If the CPU is fast enough, the GPU will behave just fine, right? With the Radeon HD 8870M will I be able to play the most demanding games that are now on the market, say Crysis 3 or Battlefield 4?

Correct. You should be able to play them on low to medium settings.
