Which one of these 3 would you all suggest I get for the rig I'm building?

EVGA 680i SLI
ASUS Striker Extreme
ASUS P5N32-E SLI (NVIDIA nForce 680i SLI)

I'm a gamer, video editing, and a cooling freak.

the striker and the p5n32-e sli are just about the same board. Only difference I know is some LEDs and a power/reset swith on the board itself in addition to pin headers. Hardly worth the price difference.

The eVGA board is the nvidia reference board, also sold by BFG, XFX, ECS, biostar (supposedly) and possibly foxconn. Since all reference boards are produced by the same contract manufacturer, they are identical. If you go with the reference board, grab whatever from that list is cheapest, as quality is identical. Only difference is the box it came in...

Obviously you want a 680i SLI chipset... have you considered offerings from gigabyte? or MSI? both have designed excellent boards designed around the 680i chipset. Gigabyte's version is quad gigabit LAN with I believe ten SATA ports, MSI has four 16X slots and onboard X-Fi audio.

If you are into water cooling, BFG has a version of the 8800GTX video card with waterblocks factory installed. Spensive, but it only needs one slot, not two.
