I am looking at these two monitors:

LG 32GP750-B:
- IPS
- 32"
- 2K
- 8-bit+FRC
- 1000:1
- G-sync
- Has a USB service port so the firmware can be upgraded.

Gigabyte GS32Q:
- IPS
- 32"
- 2K
- 8bit+FRC
- 1200:1
- G-sync
- Doesn't have a USB port, so the firmware cannot be upgraded?

Technically the GS32Q is better because of the higher contrast ratio, but it doesn't have a USB port for firmware upgrades which makes me wanna go with the LG.

what are your thoughts on this?

Monitors are like speaker systems, only YOU can make that decision. Compare the two side by side and go with the one that looks best to YOUR eyes as you are the one that has to live with it. No two people see color and light exactly the same way and what looks fantastic to one may look blase to another (or you)

Neither display.

The Gigabyte is Edge Lit. The LG is edge lit and almost 5 years old with no local dimming, there are newer and better displays out there. Once you go HDR with zone dimming, there is no going back until OLED improves and becomes the defacto standard.

But... to answer your question. If I had to pick one of the two, It would likely be the Gigabyte due to the higher contrast ratio and even at that, both displays are sub par in my opinion.
