Question Which one should one buy? M2 nvne or sata 3 ssd? Motherboard supports both

It depends on lots of factors. Cost is usually the first. A SATA SSD is usually cheaper than an NVMe. So lets say you can afford a 250GB NVMe SSD or a 500GB SATA. You could get higher performance on more software with the SATA. The absolute performance of the NVMe will be higher, but you can't put as many applications on it. Also, it will depend on what OTHER storage you plan to have. Again, a 1TB SATA SSD might be all that is required. No spinning disk at all.

I would say buy the one with the bigger space for the cash, like Kanewolf says.
I went from an SSD Sata 3 to Samsung Pro Nvme = no difference at all for normal computer use, which is what I do.
Maybe you would notice something if you did heavy adobe editing, but I don't do that.
So my own experience, the NVME was a waste of cash - nice to have, but not needed
 
video is a waste of super fast storage. It doesn't need to be fast to stream well. music, video, photos all personal data should be on a separate data drive, backed up to the cloud and maybe backed up to long term storage BluRay ideally, to protect your data properly and not waste super fast storage space where you don't need it.
