Which OS of 7?

OK, I will try to keep simple.
I have a beta of W7 on a partitioned HD. It will expire tonight 3/1/10.
I want to keep Ultimate (would settle for Pro).
I need to keep it as cheap as possible.
i am thinking about going OEM.
I would like to find out if I can use an upgrade of Ultimate with the beta?
Any help is appreciated.

Ive been doing some homework,
No upgrades,
So I am looking at OEM, and I found that I need to use a OPK (OEM Preinstallation Kit).
I am not familiar with this and wondering how difficult it is to use.
Can anyone tell me how it works and what steps to take when using?

To add to that last question:
Do I "have" to use the OPK to do a single install on my PC?
I am not using a server to load a few rigs.
