Which Pc should I build?

Which one of these Pc's should I build, I know that the i7 8700k is going to be better for gaming and the i9 will be better for productivity but I feal like a coffee lake cpu doesnt have a place for a $4000+ Pc. I will be mainly gaming and will do photoshop, video rendering, and use video game engines once in a while like once or twice a month? Ps I dont care about the price of the cpus I just want to know which one makes more sense for a pc mainly for gaming and is $4000+

I like the I9 better just dump the seagate drives and get WD {Western Digital} and the M.2 go with a Samsung 960 evo 250GB.
other than the drives it looks good.
on the cooling I like EK they have some nice kits.
