Which set-up would be better?

i7-6700k with MSI GTX 1060 Gaming X 6gb

Or

i7-6800k with EVGA GTX 1060 SSC 6gb

Depends on the task in question.

In gaming, for example, the 6700K should outperform with it's higher clock speeds and comparable GPU/

In production workloads, or in games that can utilize more cores/threads, then the 6800K should win out.
