Which should I get?? PSU question

So I see some good deals on Cooler Master PSU (components are made by Sea Sonic) for 700v (full mod GOLD) and 1000v (full mod GOLD).

I plan on overclock:
-AMD FX 8350
-Gigabyte FXA990-UD3
-G Skill 2x4gb 1866 CL8
-Cooler Master Storm Scout II case
-7950 or 7970 GPU
-WinTV 2250 tv tuner
-Asus DVD Drive
-Will get Samsung SSD
-2 or 3 TB HDD

Which is perfect for me with how much room left? I may add another SSD later and Crossfire later.

700v $89
1000v $129
 


Yeh. For the cost of 800 the 1000v is cheaper. So if I crossfire, the 700 won't do? How about if I didn't crossfire?
 


for $129, only $40 more, would you find value in buying ithe 1000 and not need it or stick with the 700w? would there be any better performance?
 


what would crossfire or sli really do for me? what if i didnt game and only used it for media center, would crossfire or sli make it better vs one card?
 


is that really where sli or crossfire matter, is on multi screen? I plan on using my one 60" monitor.
