If you want a 500gb boot drive, and a 2tb storage drive, I would do NVME for OS. I would buy an MX500, over a DRAMLESS P2. The Crucial P2 is not a very good drive, sadly.

would this work as a cheaper alternative to the Crucial P5 PLUS 500GB NVME?
 
If you can I would avoid a dramless drive for your boot drive unless it's a Samsung 980. I have the BX500 2TB as one of my game drives, the MX500 is better, if they are similar in price you might want to stretch for that. However I haven't noticed any difference between that and my other drives when loading or updating games.

That would be a good cost effective combo. Please note however the Gigabyte AORUS Gen4 500GB you quoted is actually faster than the Samsung 980, though I think that difference is unlikely to matter to you.

An alternative would be as @geofelt suggests, just get one big 2TB drive NVME. Only downside is it's easier to backup your OS drive or reinstall Windows when all your games are somewhere else.
