Hello, my laptop has :

• Ryzen 7 Octa Core AMD R7-5800H
• 8 GB DDR4 RAM
• NVIDIA GeForce RTX 3050

What's the latest version of After Effects that I can run smoothly on it ?

Compare the hardware and software requirements of After Effects versions to your laptop.

Most software applications provide some listing of hardware requirements in the form of "minimal", "recommended", and "best".

You do not want minimal and you do want as much best as affordable and will "fit" into the laptop.

The problem isn't with after effects it's with the size of the project you are going to edit.
The program itself has no issues to run, it's loading the graphics and applying the effects that is tough on the system.
8Gb is going to limit you on the size/resolution and color depth that you can use to even load in the graphics and then you have to apply effects on top of that.
