Which windows 7 version?

Should I get the Ultimate, Home Premium, or the Professional version?

I want to game and stream, here is my build:

Home is limited to 16Gb RAM, Pro has a much, much higher RAM restriction, Ultimate would be more for business use or die hard power users. Home will be fine if you don't plan on updating how much RAM you have while having win 7.
