Question Why am i getting micro freezes while gaming?

This is my first self-built PC and first Windows machine. Built it to play games about a year ago.

Specs are pretty high. Evga 1080 FTW2, 8700K, 16 GB 3200 ram, Overkill PSU (don't remember atm), Asus 370E, Nvme M.2 SSD.

Recently been playing Vermintide 2, and at odd times the game will go through micro freezes during a match.

I'm not even sure where to begin with diagnosing this and any help would be appreciated. Let me know if there's anything I can provide that would help.

exact model of the psu?
cpu/gpu temp and usage during the game?
ram/ssd/hdd usage during the game?

Hey, sorry, I ran into some issues getting OSD to work with Rivatuner/Msi Afterburner. But after I get back from class I'll get that info for you.

The PSU is a SeaSonic Focus Gold 80 Plus 850 FX.
