why do we see Gigabit devices only in wireless?

I was planning future hardware and came up with a shortlist of a gigabit NIC, but not a gigabit router.

This is for a neighbor that isn't interested in going wireless.

Why are there soo many gigabit wireless but not wired?

I think you have it the other way around, there are A LOT of gigabit wired solutions avaliable and hardly any wireless. The only gigabit wireless solutions probably come in the form of a microwave dish right now :)
Gigabit networking has not net progressed to being mainstream at home. It is still used mainly for a corprate environment. That is why you don't see lots of gigabit switches in little home routers yet.
You would need to get a router and then plug it into a gigabit switch that the computers are using.
