The heatsinks don't look special. PC heatsinks that work well are usually massive and have a huge amount of surface area. So how is this being accomplished?
Decent fans, minimal filtration and dedicated airflow channels, AFAIK.
Of course that's a simplistic way to look at it, but that appears to be the core idea.

Did you see the heatsink? Looks like what you'd see on a video card. Looks like its about 1-2" deep. Noctua's are 4-5" square! Its the heatsink that is the mystery. Air channels are easy.
Or maybe it runs like a furnace! Most Macs have very poor cooling. But from what people are saying I think this design is working very well and its very quiet as well.
For noise they are altering the front fans a bit so they produce their noise at a different tone/frequency from each other. That is pretty clever. Probably not very difficult to implement. Just use different fans!
