  1. I've heard 4k content has better audio than 1080p. Would 8k follow the same trend? How does resolution affect audio quality?
  2. Why are all the resolution doubling the number instead of coming with with a unique number that still follows the same resolution proportion between horizontal and vertical?

Solution
  1. Video resolution has no affect on audio quality. Audio bitrate, speakers/headphone quality, and dac/amp quality affect audio quality.
  2. It does happen. I would guess the reason one wouldn't want to do that for ease of scaling. I would not be the best to explain how scaling works.
