Simply put, laptops are not built from standard parts.
Desktops are (mostly).

You can't buy Case X and put in motherboard Y. The ports and mount points don't line up.
Internal connectors are different.

Having said that, there is the Framework line.
Which will allow customization and replacement. But only within the parts that they sell.
