They tell you to do that so the installation is quicker or because they are making changes to the program. Those programs they tell you to close are using processor power. By closing them you can maximise the speed of the installation
Sometimes programs might be updating in the background and it is highly advised you stop them doing this, because installing two different things at the same time can result in mixing up of data- one install might mix with the other to cause both of them to fail. you are probably fine if you don't however, often programs say this to stop them getting sued in the unlikely case that something is interfering. Personally I have never had a problem
