This is always one of those you try it and see. Wifi usage is massively different from person to person. Some people live with houses spaced far apart other live in huge apartment blocks and you can see massive number of neighbors routers.

On 5g in general there are 2 blocks one in the bottom range say 36 and one in the top range say around 150. This can vary a bit from country to country but in general those are the only 2 ranges you can set. 802.11. ac actually uses 4 of these so it would use channels 36-48. It varies a bit exactly what number you type in. Some routers you put in 42 other want you to put in 36 and some other don't care.

But yes if you are using the low block try to set the high block and see if it works better. Or try auto and see if the router guesses better than you can.

Would you say, use a wifi extender or just change to 2.4 GHz
 
All depends on what your problem really is. 2.4g generally gets better coverage but runs a bit slower since there is less bandwidth. Extenders trade performance for coverage. You have to be careful where you place them and even then you are going to lose about 1/2 the bandwidth. You also now have 2 radio signals that can takes errors because of interference.
