Will a 1070 Ti be powerful enough to handle dual 1440p monitors? Or do I need something more powerful?

Is a 1070 Ti powerful enough to handle dual monitors? The monitor setup I will be using is one 1440p 144 Hz monitor as my main monitor and a 1440p 60 Hz monitor as my secondary monitor

Yup it's plenty powerful enough.

I set up a 1440p and a 1080p on my GTX1080ti and I saw ripping in Middle Earth SOW when I played video on the 2nd monitor. I have Intel onboard graphics so I used that for the 2nd monitor with much better results.

Yup, as long as you are not multi monitor gaming it will have plenty of juice for that. I run a 1440p 165Hz main with dual 1900*1200 wingers on a 1070 and it's great. a Ti will do even better.
