I really need a boost on my (surprisingly) aging ASUS M32BF with an AMD A8-5500. I've been looking at the GT 1030, but i'm not sure if it's the best choice for my hardware. I'm not exactly looking to be playing a lot of games (Xbox One is my main choice), but I want the ability to if I want to.

Full specs
AMD A8-5500 - 3.2 GHz
Integrated Radeon HD7560D
4GB RAM
350w PSU (no 6 pin)

Thanks.

A 1030 should pair fairly well, and I wouldn't really think it's worth considering anything greater than a 1050.

A 1030 should give you a solid boost, without going overkill given the CPU's ability.
That cpu is somewhere around the 1st gen iCore performance and the only choices from current gen. Nvidia side you have are the 1030 or 1050. 1030 will give you somewhere around 750ti performance, but honestly thats the lowest you can go. But as you said, you are a sporadic gamer on the pc, it should be a good choice. If you plan on more serious gaming, i would suggest the 1050 instead.
And if you wanna go for somewhere between the 1030 and 1050 performance, look out for the AMD RX460.

The big value of an APU is the superior graphics. I think you would not gain much with an entry level graphics card like a GTX1030.
You buy a APU for the excellent integrated graphics.
But, there are no real good upgrades, particularly for a gamer.
If you install a superior discrete graphics card, you will have thrown away the big advantage of the APU.
Then, you are left with a relatively weak cpu. Most games depend on only a few fast cores.

Bottom line.....
What you get with a APU is what you will live with forever.

While thats mostly true, the interesting factor over here is that APU conforms to the tech of that generation and may not be left as capable after years of tech advancement since its release. While on the other hand a GPU of recent gen. has all the advanced tech and capabilities to handle newer games. There certainly will be some performance increase from a new card like the 1030 or 1050.
