Will changing my thermal paste void my gpus warranty?
I have a gigabyte gaming oc 2080ti. It goes into a weird pulsing sound at idle. Fans keep turning on and off.

Probably. But you would have to read the specifics from Gigabyte. Since you have to disassemble the card to change the thermal compound you probably void the warranty.

Any clue on the issue of the fans pulsing and start/stopping at idle?

Many cards now don't run the fans until a minimum temp is reached (55c..60c). Likely it kicks in at that min temp and almost instantly falls below the threshold and shut off. Your best bet is to get software that allows you to control the fanspeed curve (Afterburner for example)

You can get software from Gigabyte site that will allow you to modify the fan settings, you can even disable the fans shutting off and just running at minimum speed instead.
