If i'm willing to give up some fps in games will be able to render videos at 1080@60fps and play games at the same time?
CPU:Ryzen 5 1600 @3.8 ghz
GPU:Asus Expedition Gtx 1060 6gb
RAM: 8gb
MOBO: Asus prime b350-plus
PSU: xfx ts series 550w 80+ gold

You can assign 2 cores and 4 threads to the rendering software but there might be 2 issues.
1. You only have 8GB of ram of unknown speed and probably single stick ( provide info if possible, download cpu-z and post spd tab)
2. One HDD? Or two? Cause if you have one hdd and as the rendering software does its job it will probably make your games stutter.

Another question will this power supply give me a little headroom for this configuration (is it futureproof).
I mean : xfx ts series 550w 80+ gold

You need 3000MHz ram to really get perfomance out of the CPU as it is ram speed hungry.
Well you could try to render and play but depends which games, as you play games at 1080p and high resolution it means that 6GB's of ram is allready taken soo leaves no headroom.
