MY question is will i be able to purchase this monitor

and be able to run games like Dying Light and the up coming Grand Theft Auto V on
Ultra settings at 2560 x 1080 60Hz .Or will i have to get another 970 and run in SLI or something?

Please help . also im new to this so forgive my question format. Thanks in advance !

You should get playable performance out of the 970 at that resolution with maxed out graphics on most games. There are a few that you would likely have to turn down to high in order to hold 60 fps, otherwise you'll probably sit around 45-55 on games like Crysis 3 or around 35 on Company of Heroes 2.

Would you recommend me to add another 970 to my build to gain the desired settings?
