Will I benefit from putting OS and Apps on separate SSD?

I have been told to put OS on a SSD. I'll do that since it has major speed benefits.

What about Applications, should this be on a separate SSD on its own? And with another SSD for a scratch disk?

I can , just about pay the extra money but what REAL benefit will I see? With OS and apps on one SSD, will it slow things down?

What if I was to put Apps on to a separate HDD as well as a scratch disk?

OS and apps in one SSD would work same. So no need on separate SSD!
You can keep your OS and apps on SSD and media files on regular HDD

I'd recommend you put your OS and important apps to one larger SSD like 840EVO 250GB and other your media files on WD Black or Red 2 or 4TB drive

why 250GB instead of 120GB surely the one app and OS will take no more than 50GB leave over 50% free?

Because price difference is not too big your 120 will fill really fast so 250 is good you can also install some games!

i had planned for the following build:

i7 4770K with H87 MBOB
GTX 770 or 780
RAM: 16GB or maybe 32GB (what people say is overkill today in a year will be average - i'm sure a year ago an 8Gb was overkill or more than suffiecient) does it mater for it to be 1600Mhz or 1800 or 2333 Mhz?

No need on 2133 MHz RAM 1600Mhz enough, you won't notice difference and with unlocked "K" processor you need "Z" series chipset!
