Will I have enough PCI-E lanes with 8700k??

So I'm planning on a new build, and I wanted to have an asus z370-e, a 8700k and a 1080ti with 2x samsung 960 evo in raid 0. I already have a sata ssd, 2 hdd's, an internal pci-e usb 3.0 hub and a oculus rift connected. My question is will the 8700k's 16 lanes be enough to run everything??

Yes it's fine. Sata ports 5 and 6 will be disabled though.
Also suggest against using Raid 0 on SSDs.

So would it be better to buy a 512 gb 960 pro, rather than the cheaper 2x 256 gb 960 evo

Either 960 evo 500GB or 960 pro 512GB - depending on your budget considerations.
