Probably, but I think it would be fine on a single 1080p monitor. You definitely will not see the 670's full potential, but I think it's still good enough to get good fraps. You wouldn't see the 670's full potential on 1080p anyway.

Thanks, I would only be running it on a 1920 x 1080 resolution anyway.
Well then may I ask why you want a GTX 670? It's massive overkill. You could go with a 7850 or 650ti boost for WAAAAAAY cheaper, or if you want some overkill, a 7950 or 660ti for considerably cheaper.
