Will my i5 - 7500 bottleneck a GTX 1080. I have a 1080p monitor (getting 4k monitor in few months) so should i use DSR to scale the resolution up; would that help the bottleneck and give me more fps?
I doubt the Kaby Lake quad core will bottleneck the GTX 1080 at 4K unless you get a monitor with a 144Hz refresh rate and intend on trying for that fps. Remember, you won't "see" more fps than the vertical refresh rate of the display panel.

no, 4k is seriously gpu bound
your 1080 will be the fps limiter as it is underpowered for 4k
I strongly suggest a 1440p/ultrawide 1080p monitor for your setup
