Short answer: Maybe.

Long answer:
FPS depends completely on a game and it's graphical settings. Also, some games have FPS limit on them where no matter the hardware you have, game will not run faster than 30/60 FPS.

Should you go with 144 Hz monitor? Yes.

Even when you may not get 144 FPS on all games (which is unlikely since you're willing to reduce graphics and you have good GPU), you'd still get much smoother gameplay compared to 60 Hz monitor. Seeing 100 FPS or 120 FPS out of a game is still much better than playing it on 60 FPS.

My Skylake build has similar specs to your PC and i have 144 Hz monitor as well (full specs with pics in my sig). Here's the FPS i've gotten in some of the games that i've played;

55.6 FPS - Euro Truck Simulator 2
62.6 FPS - MudRunner
108.9 FPS - Astroneer
121.77 FPS - Hasbro's Battleship
123.02 FPS - Flower

Note: all games are in high/ultra settings @ 1080p fullscreen and average FPS is listed (used NZXT CAM FPS Overlay to get the FPS values).
