[SOLVED] Will SLI work well in this situation?

It's currently possible to get two 1080 ti's for less than a 2080 ti. After doing my research I've learned that sli is only recommended for higher resolutions. Would two 1080 ti's in SLI be good for a 3440*1440 ultrawide monitor?

In very few games, yes. SLI support is hard to find in games nowadays. Both NVidia and AMD are phasing out multi-GPU configurations for that very reason. Older games that support SLI still work, but you can get great performance out of a single 1080 Ti on those games. The only reason to really have two high end cards like that is for extreme benchmarking. Actual real world uses are few and far between.
