I recommend the Asrock Extreme3 Gen3 Z68 motherboard. Much cheaper than most P67 MoBos (and it's Z68). Great build quality and performance. It's close to $130.
It doesn't seem as though there are many mobo's to choose from. When selecting the mobo do I need to just specify the LGA 1155 or do I need to select the P67 chip-set, etc?

All you really need to look for is that the board uses a LGA 1155 socket. The chipsets are there for certain reasons:
H61/H67: For home use; allows you to use Intel HD Graphics, but no overclocking; tend to have few features
P67: For gamer use; allows for overclocking, but not HD graphics; tends to have a nice amount of features
Z68: for enthusiast; allows for overclocking and HD graphics use; tends to have many features
In a microATX, it will fit IF it is an LGA 1155 socket motherboard.
