Hi i want to buy a i5 6600K with a evga gtx 1060 sc with a MSI Gaming Intel Skylake H170 Gaming M3 motherboard. Will there be any bottlenecking?

Should I rather buy a z170 motherboard? That is the same price as this one?.. Is there any need to overclock the i6 6600K cause im going to buy the cooler master 212 cooler

I don't think people understand what a bottleneck is. Just a term they heard.
In your case, the 1060 is a major bottleneck as it will never allow your CPU to be fully utilised. 2x 1080s will be able to use the 6600k closer to it's potential, thus creating less of a bottleneck.

This is actually the opposite of a bottleneck.
The 1060 is a weaker component compared to the 6600k, that is a given. However, if you run an CPU intensive task (or game) the processor would easily reach full utilization. Conversely if the CPU was a bottleneck on a GPU the graphics card would never reach full utilization as the processor could not supply it with enough info no matter how hard its pushed.
